IntroductionThis hearty soup, made from left over roast beef is a great meal by itself or with crusty bread in the winter or a salad anytime. This hearty soup, made from left over roast beef is a great meal by itself or with crusty bread in the winter or a salad anytime.
2 cups roast beef, top sirloin, diced
2 cups carrots, chopped
2 cups celery, sliced
1/2 cup onion, chopped
2 cloves garlic, minced
1 cup turnip, cubed
1 cup Potato, diced
2-3 bay leaves
1 Tbsp. fresh thyme, fresh, or 1 tsp dried
1 tsp pepper, or to taste
1 tsp. salt, or to taste
1/2 cup pearl or pot barley
4 tsp. Beef bouillon granules, or 4 boullion cubes
8 cups water, or water and reserved drippings from roast
Simmer over low heat until barley is soft, about 2 hours.
Adjust seasonings if required.
