Sauteed and Scrambled Omlet

Ingredients

    Canola oil Non-Stick Spray (or other healthy oil spray)

    1 medium or large egg.

    1/4 cup of mushrooms slices (cut slices into pieces for faster cook time).

    1/4 cup finely chopped onion

    1/4 cup finely chopped spinach (or shred the spinach)

    1/2 tsp of minced garlic

Directions

Turn burner to medium-high heat and preheat frying pan for 3o-45 seconds.

Give frying pan a quick spray of the canola spray and saute the mushrooms, onion, spinach, and garlic. While they are cooking, beat the egg and milk together in a bowl (for a fluffier texture use a whisk or food processor).

When the veggies have lost their firmness, but not their color, add the egg/milk mixture and scramble till there is no liquid left in the pan.

This makes one 3/4cup serving.
