Directions

1 - Pour broth and milk in coffee maker pot to warm for about 5 min, or place in small soup pot and turn burner to med-low. Meanwhile, gather and pre-measure other ingredients.

2 - In medium soup pan, melt butter with oil (set burner between med-low and medium heat so as not to scorch the butter/oil). Whisk in the flour until smooth.

3 - Very slowly whisk in the broth and milk, simmering and whisking constantly. Do not turn burner to a higher heat. Be patient and it will come to a simmer gently if you add the liquid in small portions. Whisk constantly until fully thickened.

4 - Add salt, pepper, and/or any other seasonings of choice.

Makes the equivalent of 1 can of condensed soup.

  • Wow. This is the best and easiet recipe I have seen. Much better than canned, but with a little tweaking, you can almost eliminate the sodium to make it heart healthy. Use salt free butter and sodium free boullion. Will try for sure! - 3/13/10
