A yummy and EASY low cal chicken breast dinner, using some of my favorites like balsamic, feta and italian seasonings, but I reduced the calories from their original recipe
4 Boneless, Skinless Chicken Breast halves, (1 1/4lbs.)
2 Tbsp Light Balsamic Vinaigrette [
1 tsp Italian seasoning
1/4 tsp seasoned pepper blend
1 large Roma tomato
1/4 cup crumbled Reduced Fat Feta Cheese, (1 oz)
2. Broil with tops 4 inches from heat about 10 minutes, turning once, until chicken is no longer pink when centers of thickest pieces are cut. Top with tomato and cheese. Broil 2-3 minutes longer or until cheese is lightly browned.
[High Altitude (3500-6500 ft): Broil chicken about 15 minutes. Top w/ tomato & cheese. Broil 1-2 minutes longer.]
EBA puts the calorie count per serving as 220, however my count here at Sparkrecipes uses a light vinaigrette AND a reduced fat feta, reducing the calories to just 159 per serving.
I serve this with a fresh baby spinach salad for a healthy, great tasting, easy dinner.
Number of Servings: 4

For those who are "broiler-challenged" like me, check out a similar (and even easier) oven BAKED version in my recipe box (Mediterranean Chicken)
