Rosemary Beef and Potatoes

Introduction

An easy slow cooker meal. Put it on before you leave for the day, and the house will smell wonderful when you get home! An easy slow cooker meal. Put it on before you leave for the day, and the house will smell wonderful when you get home!
Number of Servings: 8

Ingredients

    1 lb Red Potato, quartered
    1 c. Baby Carrots
    3 lb Boneless Beef Roast
    3 tbsp Dijon
    1.5 tsp Dried Rosemary
    0.5 tsp Dried Thyme
    0.5 tsp Mrs. Dash Southwest Chipotle (or flavor of choice)
    1.5 tsp Minced Onion
    1.5 c Beef Broth

Directions

Arrange potatoes and carrots in the bottom of the crockpot

Trim fat from roast. Mix mustard, spices and Mrs. Dash. Spread mixture over the roast then place it in the cooker. Sprinkle onions over the roast. Pour in broth.

Cover and cook for 8 hours (or until beef is done)

Remove beef and vegetables from the cooker. Skim the fat from the remaining juices.

If desired, make gravy with the juices, or serve with the pot juices.
