Introductionneed to stretch 1lb of ground turkey for the family.....this is a fairly quick and delicious way to go. healthy and fun to eat. 1 lb ---*Turkey, Ground turkey, 93% lean,
5---------Garlic, cloves minced
1 cup----Onions, raw, chopped
1 cup----Zucchini, , sliced
1 cup----Mushrooms, fresh, pieces or slices
1/4 cup---Peppers, sweet, red, raw, sliced,
1/4 cup ---Green Peppers (bell peppers), chopped
1 TBSL----Tomato Paste,
2 cups ----*Spaghetti/Marinara Sauce
1/2 cup-----Feta Cheese, crumbled
1/4 cup-----Parmesan Cheese, grated,
1/4 cup-----Cheddar Cheese shredded
4 cups ------Whole Wheat penne pasta
2 TBLS-----olive oil
1 tsp------Italian spice mix
1 tsp-----cracked fennel seed
1 tsp ----ms. dash red pepper mix (spicey for a little kick)
sea salt to taste/ white pepper to taste
in large pot boil water for the pasta......boil till aldente about 10-12 minutes. drain
put olive oil in frying pan on med/high hear
take all veggies chop and saute them in a frying pan
add spices to veggies while sauteing them
when they are aldente put them aside on a plate..
in the same pan brown the ground turkey when almost totally browned add the tomato paste stir to incorp together, then add the sauce....now sir in feta cheese and parmesion cheese, now add cooked veggies and fold them all together.
now layer in 9 x 13 dish noodles then meaty sauce mix then noodles then sauce mix....add the cheddar cheese on top...bake for 30-35 minutes....let set 5 minutes cut into 8 equal parts and serve.
** you can add low fat cottage cheese if you like but it changes the calorie/nutrients numbers.
