Vegetarian Chili for Two

Introduction

Ingredients

    Olive oil to saute
    1/2 cup chopped onions
    2 cups frozen broccoli
    1/2 cup chopped bell peppers
    2/3 cup frozen corn

    1 cup Pinto beans with Jalapeno Peppers
    1/4 tsp ground cumin
    1.5 ounce Pepper Jack Cheese

Directions

Makes 2 filling servings.
Saute vegetables in olive oil until tender. Add beans and cumin. Mash beans if desired. When everything is soft and well-cooked, take off the burner and add cheese to melt.
