Blueberry Muffins by Jen - Heart Healthy

Introduction

This is a "lowered fat" recipe using applesauce in place of the oil. ALSO: I've used ground flax seed ("Golden") to include the heart healthy Omega-3's that we need. Ingredients

    DRY INGREDIANTS - mix:
    2 C. Flour
    1 C. Ground Flax Seed (**See notes on using ground flax)
    1 C. Sugar
    4 tsp. Baking Powder
    1 tsp. Sea Salt

    WET INGREDIANTS - mix, then fold into dry ingrediants:
    2 eggs (large)
    1 C. Milk
    1/2 C. Unsweetened Applesauce
    1 C. Blueberries, fresh or frozen

Directions

Makes 14 larger sized muffins - tins filled 3/4 or more

Bake at 400 degrees for 30-35 minutes. (For smaller muffins, bake 20-25 minutes.)

I've doubled a standard muffin recipe so I can include ground flax seed (meal). I ground my seeds fresh but you can find it already ground.

Ground flax seed has a nutty flavor and can be exchanged for white flour in equal amounts. HOWEVER:

IMPORTANT! MAKE SURE TO MEASURE FLAX LOOSELY - NOT PRESSED! It is very dense and will cause a baked good that is TOO DENSE if you're not careful.

There are different types of Flax Seed and from what I understand, differences are primarily in flavory. To date, I've only used "Golden" flax seed in my baking.
