Ingredients

1 lb. Turkey, Ground turkey, 93% lean
15 oz can Diced Tomatoes
11 oz. canned mexican corn
2 oz. chopped jalepeno peppers (from jar or can)
18 corn tortillas, 4.5"
1 packet Taco Seasoning
1/2 teaspoon ground cumin
1.5 cup Reduced Fat Colby and Monterey Jack Cheese shredded
Directions
Brown ground turkey in skillet, then drain fat. Stir in canned tomatoes, taco seasoning, cumin, jalepenos and Mexican corn. Heat through.
In a 9x13" baking dish, layer 6 corn tortillas so they overlap slightly. Spoon half of meat mixture over tortillas. Follow with 1/3 of the cheese. Cover with 6 more tortillas and repeat layering. For the top, simply sprinkle cheese and salsa if desired. Bake in 400 degree oven for 20 minutes or until top is golden brown. Makes 6 larger servings or 8 smaller servings.
