Garlicky Chard & Gorgonzola Portabellas

Super fast and easy vegetarian dish. So yummy you won't want to stop eating them! So easy to multiply and cook for a crowd. Super fast and easy vegetarian dish. So yummy you won't want to stop eating them! So easy to multiply and cook for a crowd.

Ingredients

    2 Med Portabella Mushrooms
    2 T Light Italian Dressing
    1.5 cups chopped swiss chard
    2 cloves garlic, chopped
    1 T Olive Oil
    1 T Balsalmic Vinegar
    2 oz Crumbled gorgonzola

Directions

Clean mushrooms, remove stems & gills then brush with italian dressing. Place gill side down in a small casserole pan and roast in a 350 oven 15 minutes. While the mushrooms roast, heat the olive oil in a med saute pan, add the garlic just for a few seconds then the chard and saute until the chard is wilted and tender, stirring often. Add the balsalmic vinegar and remove from heat. Take the mushrooms out of the oven and flip them over. Pile the chard on top then cover with gorgonzola. Return to the oven for 5 minutes then turn the oven to broil for about 2 minutes until golden & bubbly on top. Delish! Makes 2 servings
