4 trout fillets
4 tbsp vinegar
4 tbsp. water
2 tbsp. granulated sweetener
2 tsp finely grated ginger
1/2 green or sweet red pepper, very thinly sliced
3 green onions, sliced thin diagonally
2 tsp cornflour(cornstarch)
Combine vinegar, water, sweetener and ginger in a small pan and bring to boil. Add pepper and green onions; return to boil and cook for 2 minutes. Mix cornflour with little water and add, stirring with a whisk until sauce thickens.
Plate the fish and pour over the sauce.
Delicious with new potatoes and fine green beans or rice and a mixed green salad.
