Shrimp Scampi

Introduction

ONE OF MY FAVORITE. We love garlic so I add extra. ONE OF MY FAVORITE. We love garlic so I add extra.
Number of Servings: 6

Ingredients

    2 lbs.Shrimp (shelled) 1/4 Tsp. salt.
    4 TB. diet margarine Pepper to taste
    1 TB.olive oil 1/4 cup chopped parlsey
    2 TB. lemon juice 4 cups cooked spaghetti
    1/4 cup green onions 2 TB. sherry (optional)
    6 cloves of garlic

Directions

In a large skillet, heat olive oil. Add the shrimp and cook until opaque in the center; Remove to a warm plate. Add the garlic and onions to the skillet and cook until fragrant (about 10 seconds) then add the lemon juice, (Sherry), parsley, salt and pepper( to taste). Remove pan from heat and add diet margarine. Return the shrimp to the pan and toss to coat wtih the sauce. Arrange over pasta, Spoon remaining sauce over shrimp. Yleld: 6 servings
