Introduction

I make large batches of Rice and use them for a couple of different meals to save prep time. This recipe doesn't take long if the rice is already done. Ingredients

    2 chicken breasts, skin removed hand trimmed
    2 tsp Herbs de Provence (or what ever you like, fresh thyme is nice)
    pepper to taste
    1.5 C Prepared Brown Basmati Rice (see instructions)
    1.5 C low sodium chicken broth or homemade vegetable broth
    .25 C. Chopped onion
    1.5 C Steamed Peas

Directions

This makes 2 servings
Prepared Brown Basmati Rice (rice cooker):
1/2 C. Brown Basmati rice
1.5 C. Broth
.25 C. onion
After washing the rice and soaking for 10 min (then draining for 5) combine all 3 ingredients in rice cooker. You can make much more and preserve rice for other recipes. One serving of prepared Brown Basmati Rice is .75 C dry a serving is .25 C. The rice takes about 45 minutes
Steam Peas (10 minutes or so)
Wash and trim chicken breasts
sprinkle chopped herbs on top of chicken
Grill chicken for 4-6 minutes (George Forman works great)
Serve
