Whole Wheat Zucchini bars with Walnuts and Cream Cheese Frosting

Ingredients

2 1/3 c. Whole Wheat Flour
1/4 tsp. baking powder
2 tsp. baking soda
1/2 tsp salt
1 tsp nutmeg
3 Large eggs
3/4 c. no sugar added apple sauce
1/4 c. Canola Oil
1 1/2 c. Sugar
3 tsp Vanilla Extract
2 c. Grated Zucchini
1 c. Chopped walnuts

Frosting:
2 c. powdered sugar
1/3 c. butter
3 oz Cream Cheese
1 tsp Vanilla Extract

Directions

In one bowl add flour, baking powder, baking soda, salt and nutmeg and mix well.

In another bowl add eggs, apple sauce, oil, sugar, vanilla, and zucchini. Mix well.

Add the dry ingredients to the wet ingredients and stir into the nuts. Spread the mixture evenly into a 17"X12"X1" pan. Bake at 350 degrees for 25 to 30 minutes. Allow to cool.

Frosting: Add powdered sugar, butter, cream cheese and vanilla and beat with a mixer until the frosting is creamy. Frost when the bars are cool.

This makes 24 - 3 inch X 3 inch bars. They freeze well and are great for taking out for company on short notice.
