Gingerbread Muffins - Low Fat

Ingredients

2 egg whites
1/3 cup unsweetened applesauce
2 tbs canola oil
1/4 cup molasses
1/2 cup sugar
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/2 cup boiling water

12 tsp sugar - to sprinkle on top of muffins before baking for that crispy sugar top

Directions

Preheat oven to 350.
Place liners in 12 muffin forms.
In a medium bowl - mix the egg whites, applesauce, oil. molasses, and sugar.
In a separate bowl combine the dry ingredients.
Add the dry ingredients to the wet ingredients.
Add the boiling water and mix well.
Fill the muffin cups about 2/3rds full.
Sprinkle each muffin with 1 tsp of sugar.
Bake at 350 for 15 to 25 minutes, until done, depending on your oven.
