Slow Cooker Creamy Italian Chicken

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

pico de gallo aka authentic mexican salsa

This is a great addition to any meal. Put it on grilled chicken or grilled steak. Add it to a bowl of beans or eggs. Its a great way to get your full servings of veggies without the guilt. To change it up add some diced cucumber or diced avocado. put it in a taco or over enchiladas. Sautee it with a teaspoon of olive oil and throw in some shrimp o or chicken, or just serve with tortilla chips. It also can be served over a bed of cabbage with a dollop of sour cream and maybe some shredded cheese. The versatility of this salsa is limitless! Just look at the nutritional content :)

This is seriously the world's best spinach and artichoke dip! It's creamy and fairly low fat. I use low fat cream cheese, but you could use fat free. This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it! This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. You might need to thin it a bit with cooking water from the pasta.)

I found a salad I created about four years ago. Delicious and easy, it combines all of my favorite sushi ingredients in one bowl! And, because it's based on a California roll, it uses fully cooked seafood. This is a great way to introduce friends and family to the taste of sushi. Southwestern Eggrolls (Unchained Recipe Contest)

I love Chili's Southwestern Eggrolls, they have so much good stuff in them, but hate the fact they are deep fried. I added more beans & corn and then put them in the broiler for that crunch.
These are great made ahead of time and *frozen for a quick meal or a fun snack for the big game. I make a double batch so I can freeze some for later.

A tasty variation on the traditional popper. My hubby likes these for superbowl sunday. You can also vary the recipe by adding 2 -4 T fat free sharp cheddar shreds to the cream cheese mixture. These healthful muffins freeze well! Low-fat buttermilk and applesauce help lower the fat in these, and the whole-wheat flour and flax seed add fiber. Make a batch on them on the weekend for a quick and tasty breakfast. Serve with a piece of fruit and a glass of low-fat milk.
Blueberries are full of antioxidants and fiber. Buy organic when possible, and when they're in season, freeze them in large batches for use throughout the year. You can use frozen blueberries in this recipe, but thaw them and reserve the juice (use it in a smoothie or add to a glass of water for a treat).
