Slow Cooker Creamy Italian Chicken

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

This is seriously the world's best spinach and artichoke dip! It's creamy and fairly low fat. I use low fat cream cheese, but you could use fat free. This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it! This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. I found a salad I created about four years ago. Delicious and easy, it combines all of my favorite sushi ingredients in one bowl! I love Chili's Southwestern Eggrolls. They have so much tasty stuff in them, but I hate the fact they are deep fried. I added more beans and corn and then put them in the broiler for crunch.

Most of the smoothie recipes I've seen are for 3-6 servings. This is a good smoothie for just 1 person. It can be made with a stick blender instead of getting the big one dirty for just one drink!

A tasty variation on the traditional popper. My hubby likes these for superbowl sunday. You can also vary the recipe by adding 2 -4 T fat free sharp cheddar shreds to the cream cheese mixture. Also you can use panko crumbs for a crispier coating. Make these at least once before serving to company, as it takes a knack to get them to come out nice looking.

Use light mayonnaise if you prefer that, or swap sour cream for the mayo. Her serving size is two halves, which will make a satisfying afternoon snack!

This hearty salad provides a filling and fiber-rich base for classic roast chicken (find the recipe here). This dish makes four entree (1 cup) servings or eight side dish (1/2) servings.

Chew on This: Bulgur
Bulgur is wheat that has been parboiled, dried and debranned. It's not the same as cracked wheat, which is just crushed wheat kernels.
Bulgur and cracked wheat are common grains used in Mediterranean and Middle Eastern cooking.
Those are not to be confused with couscous, which is a tiny pasta made of semolina flour and wheat flour.

Chef Meg's Easy Steamed Fish Packets

Cooking fish or chicken in parchment paper packets is a technique known as "en papillote." The protein stays moist without any added fat, and the herbs and fish lend flavor to the vegetables. Be sure to slice your vegetables thinly to ensure even cooking. We used peppers, mushrooms and leeks here, but you can choose your favorite vegetables. Thinly sliced peppers, asparagus, carrots, onions, zucchini and green beans are all good choices. Switch up the herbs and spices, too!

Play with the recipe! Try adding carrots, celery, garlic, basil, or oregano to mix up the flavors.

Because everything is cooked in the parchment, cleanup is a breeze!
