Slow Cooker Creamy Italian Chicken

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

pico de gallo aka authentic mexican salsa

This is a great addition to any meal. Put it on grilled chicken or grilled steak. Add it to a bowl of beans or eggs. Its a great way to get your full servings of veggies without the guilt. To change it up add some diced cucumber or diced avocado. put it in a taco or over enchiladas. Sautee it with a teaspoon of olive oil and throw in some shrimp o or chicken, or just serve with tortilla chips. It also can be served over a bed of cabbage with a dollop of sour cream and maybe some shredded cheese. The versatility of this salsa is limitless! Just look at the nutritional content :)

World's Best Spinach and Artichoke Dip

This is seriously the world's best spinach and artichoke dip! It's creamy and fairly low fat. I use low fat cream cheese, but you could use fat free. This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it! This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. You might need to thin it a bit with cooking water from the pasta.)

These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.

* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.

I also extended the cooking time. The original time was 20 mins.

I found a salad I created about four years ago. Delicious and easy, it combines all of my favorite sushi ingredients in one bowl! And, because it's based on a California roll, it uses fully cooked seafood. This is a great way to introduce friends and family to the taste of sushi. Add slivered sushi ginger, bits of nori (seaweed), and sesame seeds to make it even more authentic.

Southwestern Chicken Soup

I made this soup after trying a similar one at a restaurant. Theirs had fewer tomatoes, no beans and white rice. I wanted to add more nutrition, so I added spinach, a green pepper and more tomatoes, and I use white meat chicken instead of dark. Beans and brown rice add fiber. Kim's lowfat jalapeno poppers

A tasty variation on the traditional popper. My hubby likes these for superbowl sunday. You can also vary the recipe by adding 2 -4 T fat free sharp cheddar shreds to the cream cheese mixture. Also you can use panko crumbs for a crispier coating. Make these at least once before serving to company, as it takes a knack to get them to come out nice looking.

Blueberries are full of antioxidants and fiber. Buy organic when possible, and when they're in season, freeze them in large batches for use throughout the year.
