Gluten-Free Banana Nut Bread
My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum. Even though I CAN eat gluten, I still very much enjoy this delicious banana bread. It is best hot from the oven!
It is super moist, bursting with flavor, and you would never know it was GLUTEN FREE :)))
Plus, it is very low in saturated fat and high in polyunsaturated and monounsaturated fat. It is fairly low carb for a banana bread and it also has 1 gram of sugar PER slice....and they are generous servings!Submitted by: FITFORLIFE22

Ines' Banana Nut Bread, or Muffins
Adapted Ines' favorite Banana Bread recipe by changing 2 eggs to 4 egg whites; and changing the sugar to Splenda; and changing out 1 cup of white flour to whole wheat flour. Ines always baked in her bunt cake pan. I used muffin pans and made 24 servings for portion control This recipe might have originated with the Purdue Extension office.

Banana Nut Bread
I've been making this banana nut bread for a while. It always comes out a little bit different, and I think it mostly has to do with the ripeness of the bananas. I find the the ripest the bananas, the tastier the bread. This recipe asks for walnuts, but other nuts (such as pecans) can also be used. The banana bread also tastes better the day after it's baked. Just wrap it in plastic wrap and leave it out on the counter overnight to let the flavors develop. It can be served on its own, with butter or jam. I personally find that it's better when warm, so I always re-heat it for 20 seconds in the microwave.

This is a recipe from SimplyRecipes.com These are great little muffins that come out light and fluffy, but moist at the same time. This is a double recipe.
