High Fiber Blueberry Muffins with Bran and Germ
I am trying to perfect this recipe - I'd like the "perfect" healthy, high-fiber muffin. After about a month of trying, this is what I've come up with. However, they are still a bit dry. They have the consistency of cornbread, which I kind of like for breakfast. But for those who like a moister muffin, I'm not sure if they need more apple sauce or if I need to add some fat. I'm also toying with the idea of trying Splenda's brown sugar version to lower the overall sugar content of these.

Win's wheat and dairy free high fiber muffins
This recipe combines several to create one free of wheat, dairy and refined sugar. It is high in iron and protein which is important to those who are either vegetarian, iron deficient or expectant mothers. For those who enjoy more sweetness add extra honey or molasses to the recipe or the raisins. I enjoy it topped with either a little soy butter or non fat plain greek yogurt. This low fat, high fiber muffin recipe substitutes applesauce for the oil traditional found in such recipes, and replaces a portion of the flour with wheat bran for extra fiber. To keep the calories down, the sugar has also been swapped for splenda*
These muffins bake up large, light and fluffy, with a slightly coarse texture. The wheat germ dusted on top adds a light nutty flavor, with extra vitamin E and folates to boost.
