Baked roasted Chicken thighs and veggies
Bake with skins on over cut up veggies, cover for 45 min on 375, then uncover and cook another 20 minutes until skins are brown. Drain liquids and fat, cool chicken, remove skin, de-bone and place the meat from one thigh and two cups veggies into 9 containers. Awesome lunch or dinner.Submitted by: PJSMILEY

Spicy Crispy Chicken Thighs, Oven Baked
I love the combination of the mustard and canola mayonnaise (much lower in fat than regular). It adds a nice flavor really gives the panko coating something to stick to. I hope you like it too. Baked garlic parmesan chicken thighs
Similar to another recipe on Spark from which I took my ideas but I left out the cheddar and tried to make this a bit lighter in calories. I actually used 1 cup of bread crumbs and 1/3 cup of parmesan, but found I had at least 2/3 cup left over so my recipe is based on the approximate amount that I actually used.Submitted by: RETIREDSUE

Baked Chicken Thighs w/Honey Salsa Sauce
You can use boneless, skinless chicken thighs for this but for cost and taste reasons, I prefer buying regular chicken thighs and removing the skin and excess fat myself. Nutrition facts are calculated based on my preference, so they may be a little lower if you go the boneless, skinless route.
