Bake with skins on over cut up veggies, cover for 45 min on 375, then uncover and cook another 20 minutes until skins are brown. I love the combination of the mustard and canola mayonnaise (much lower in fat than regular). It adds a nice flavor really gives the panko coating something to stick to. I hope you like it too. You can use boneless, skinless chicken thighs for this but for cost and taste reasons, I prefer buying regular chicken thighs and removing the skin and excess fat myself. Nutrition facts are calculated based on my preference, so they may be a little lower if you go the boneless, skinless route.
