LOADED BAKED POTATOES
4 large baked potatoes
½ cup 1% milk
1/3 cup (3 oz) 1/3-less-fat cream cheese, softened
½ cup (2 oz) crumbled feta cheese
2 T minced fresh or 2 t dried oregano
½ t salt
¼ t black pepper
¼ cup thinly sliced green onions
2 bacon slices, cooked and crumbled
Preheat oven 400
Pierce potatoes with a fork, bake for 1 hour or until tender. Cool slightly. Cut in half lengthwise, scoop pulp into large bowl, leaving ¼“ thick shells. Mash pulp with potato masher or fork. Add milk and cream cheese to pulp, stir with whisk. Add feta, salt, oregano & pepper and stir well.
Spoon mixture back into shells. Place on baking sheet and bake for 15 minutes or until thoroughly heated. Sprinkle each serving with 1.5 t green onions; top with bacon.
Yield: 8 servings (serving size 1 potato half)
