Banana Muffin (with Yogurt)

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the yogurt (I've used applesauce when out of plain yogurt as well). Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving.

Invisible Banana French Toast

My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values. I do, however, recommend using 100% whole wheat bread as it compliments this recipe wonderfully!Submitted by: ZOOBOOZEL
