Chef Meg's Beef Roast

Lean and versatile, this recipe is the little black dress of your healthy recipe arsenal. Cook this roast on a Sunday and enjoy it throughout the week. We used no salt, just pepper for a truly flavorful roast.

For a 2 1/2 pound roast, I spent $8.32--per 3 ounce serving, that's just 62 cents a serving! This serves 12, which means you can invite friends and family for a healthy supper or get three meals from one roast.

TIP: Searing the roast before roasting it will seal in the juices and add another layer of flavor.

Allowing the meat to rest for 10 minutes after cooking will give the juices time to redistribute. If you cut into the meat as soon as it comes out of the oven, all the juices will run out, and your meat will be dry.

Use the leftover roast to make Chef Meg's Beef and Blue Sandwich, Chef Meg's Beef, Broccolini, and Sweet Potato Supper and Chef Meg's Vegetable Beef Soup.

Carol's Slow Cooker BBQ Beef (crockpot, barbeque, slowcooker, crock pot)

The meat does not need to be seared in skillet first to make this fall-apart tender, pulled BBQ beef for sandwiches. This recipe has so much flavor no one will notice the Worcestshire sauce & the salt were deleted to reduce sodium (you may also use low-sodium catsup and BBQ to reduce sodium further). Using molasses instead of brown sugar and Worcestshire gives a depth of flavor and authenticity, while reducing sugar & sodium. It is great to take to picnics, buffets, or tailgating. Freezes well.

Slow Cooker Pulled Barbeque Beef

This is a great recipe that can be experimented with. I thought it was good as is. You can Try adding thyme, marjoram, a bayleafor two, ect. Or, for the best and easiest, substitue a good, proven barbecue rub for beef, like Heiffer Dust, which won "Best Rub" at the American Royal a year or two back and is available commercially.

I got this receipe from the mayo clinic website. I was looking for heart healthy high fiber foods for people with high blood pressure and colon problems. This is our family's favorite meal. Even the kids love it. Try adding fat free refried beans, serve it on the side or on the fajita. The mayo clinic website calculates the calories at 307, Protein at 34g, Carbs at 32, Cholesterol at 51mg, Sodium at 494mg and Fiber at 11g. The recipe calculater came out a little differently.

Easy, Creamy Beef Stroganoff

This is a recipe that my mom always made while I was growing up. It's become one of my favorite comfort foods.

Sorry Mom! I changed the recipe a little with low fat cream of mushroom and reduced fat sour cream.

This recipe comes out pretty thick, so feel free to add some milk if you'd like.

This recipe uses mushrooms to replace half of the ground beef in a traditional chili recipe. Using mushrooms lowers the calore/fat content while retaining the meaty texture. Even my 8 year old mushroom hater gobbles it up!
