Chia Chocolate Chip Cookies
I made my first chia purchase a few weeks ago, but was lost on what to do with it. So here is a chia cookie recipe! I think next time I make these cookies, I may try to blend the chia up to make it into more of a powder, since my husband is a texture whimp. The texture of the chia in the cookies is a sesame seed with a bit of a softer exterior. These cookies are easy to make and low in calories! Plus, chia has some great health benefits like they have a higher Omega-3 Fatty Acid content than flax seed, it's also high in fiber, protein, iron, magnesium, zinc and copper. And it is virtually tasteless, when you do taste it, it has a slight nuttiness. It has a longer shelf life than flax seed, and does not need to be ground, unlike flax seed. Chia can be used to top oatmeal or pudding, used in recipes, made into a gel like form that can be used in drinks i.e. chia fresca. It releases its carbohydrate slowly, so it helps regulate blood sugar. Give these cookies a try, they are delicious! I had a hard time stopping at two because they taste so good! You can even splurge a little and do half cup semi-sweet chocolate chips and half cup white chocolate chips to have a triple threat chocolate cookie!
