Sesame Chicken: SparkRecipes Un-Chained Recipe Contest Finalist

I love the sesame chicken you can find at many American Chinese restaurants, such as P.F. Chang's. Sadly, it doesn't love me, so I decided I would make a version that isn't battered and deep fried. This version is baked, so it isn't exactly like the kind from the restaurants. But, I think it's a good substitute for when you're really craving some sesame chicken!

Feel free to add some veggies. Broccoli would be good in this, I'm sure. I'll try it next time I make this. I just didn't have any on hand this time. I need to go shopping soon!

I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 280 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings!

Chicken Breasts with Red Wine Sauce (Chef Meg's Makeover)

Chef Meg made over a classic dish, which is sometimes called "Hunters Chicken" or "Chicken Cacciatore." ("Cacciatore" means "hunter" in Italian!) She reduced the fat and sodium in the recipe and cut almost 60 calories from each serving! She also added quartered mushrooms to bulk up the recipe and increase the serving size.

This is my absolute favorite dish from Ruby Tuesday so I had to find a way to make it over. Its called the smokehouse chicken and it is a favorite by many! Chef Meg's Best Chicken Soup

You're getting multiple meals from this versatile chicken soup recipe. That's why we need two sets of vegetables: one set cut into a large dice for the stock part of the soup that you'll use for another meal, and a second chopped into a small dice for the soup. This is a slow-cooking dish, but you'll get 12 servings from the soup, plus a quart of stock.

I recommend freezing single portions of soup in freezer bags laid flat so you have some on hand the next time someone gets the sniffles or has a bad day. Nothing warms the soul like homemade chicken soup.

My 11-year-old son helped prep the carrots. He created curls using a Y-shaped peeler.
This entire recipe cost just $8.41, about 70 cents a serving. That's less than a can of soup! (Note: I used a kosher chicken, which cost a bit more. If you wait for chicken to go on sale, you can save more money.)

I used farfalle (bowtie) pasta, but you could use penne, elbow macaroni or another bite-size shape.

Slow Cooker Marinara Chicken and Vegetables (Chef Meg's Makeover)

Chef Meg made over a member recipe by adding an extra serving of vegetables and dried herbs for flavor. She also used a low-sodium tomato sauce. Serve with a side salad, over whole wheat pasta or brown rice.
This is a great double duty recipe:
Stuff the leftovers in a baked potato.
You could also thin the recipe with two cups of chicken broth and turn it into a soup.
Try serving a spoonful on a piece of toasted whole-grain baguette as an appetizer.

Unchained Recipe Contest Chicken & Dumplings

This is a makeover of Cracker Barrel's Chicken & Dumplings. My aunt had created the original recipe which called for 1.75 lb chicken and whole milk. It was always one of my families favorite dinners that I made once in a while on special Sundays. Recently, I decided to try a healthier version of it with lower calories, cholesterol & sodium to see if it would pass the "family test". It did! They couldn't tell the difference. The healthy version of this recipe went down 76 calories, 31mg cholosterol & 1104 mg of sodium per serving.

On a side note, I know some people who use prepackaged biscuit dough to make their dumplings to make it easier but I don't like the taste of the perservatives because it makes the whole recipe taste like it came out of can. There is nothing like homemade!

Chef Meg's Orange Chicken

When I created this recipe, I envisioned a honey-balsamic chicken dish. Instead, I opted for rice wine vinegar, which pairs well with oranges. This dish has half an orange in every serving.

Serve it with 1/2 cup brown rice, green beans sauteed with slivered almonds and a cup of milk.

Tips:
You can dice the fruit if you prefer smaller pieces.

If you're feeling creative, use a zester to create curls of orange zest.

Do all of your prep work (such as cutting the oranges) before you break down the chicken breasts to prevent cross contamination.

Baked Chicken Egg Rolls: Un-Chained Recipe Contest

One of my biggest fast-food temptations are greasy fried egg rolls from places like Panda Express. I made over this healthy version using lean chicken and fresh vegetables. Baking the egg rolls instead of frying them saves even more calories and these don't disappoint! They're flavor packed and I can make them often without feeling guilty. Nancy's Tilapia (or Chicken or Veal) Piccata

This is my own creation. Sweet, mild, healthy, non-fishy tilapia is complimented by lemon, capers, butter, broth, and white wine in this satisfying and deceptively easy meal. I like my piccata lemony with touches of onion, garlic, and capers to round out the taste. This is a basic recipe for 1 lb. of filets. Please reduce this recipe accordingly if you use fewer filets, unless you want the leftunders as lunch or another dinner, like I do, if all is not eaten during the first go-‘round. I am a strong believer in flexibility, so experiment and substitute most any flaky white fish, pounded-flat veal or chicken cutlets, according to your creativity, pantry contents, budget, ingredient-availability, and personal tastes. Nancy's Ol' Fashioned, Easy, Simple Chicken Soup...Un-Chained Recipe Contest!

This is (a) an improvement on Corner Bakery Cafe's Mom's Chicken Noodle Soup; (b) a large pot of vitamin-rich, naturally sweet, nutritious, chicken soup that (c) is very easy to make, (d) freezes well, (e) feeds about a dozen hungry people, and (f) I make throughout the year after having and making many different variations on a theme for many years

Although it can take a little time to get the chicken off the bones, it's SO worth it! Also, if you don't want to use a whole chicken or shredding it just isn't your thing, you can use chicken parts or whole breasts instead, cut off the big chunks, and dice or shred them. They'll take less cooking time, too.

I can't take credit for this recipe, as it is originally from Weight Watchers Simply Delicious cookbook. I changed it slightly in that I use boneless/skinless chicken breast in favor of a bone-in variety. Personally, I prefer a little less vinegar and a tad more mustard, but you can play around with the recipe to your taste preference.

Make this chicken the next you have company for dinner, and they'll swear you hired caterers. It tastes like it came from a restaurant, but for much less money and effort.

By using homemade tapenade and roasted tomatoes instead of buying them at the supermarket, you're cutting the cost of this meal in half.

I made this dish with feta, but if you prefer a less salty cheese, use soft goat cheese.

fiesta chicken

Found this one years ago in a healthy magazine. 10 years later it is still one of our favorites and my college son now cooks it for him and his buddies. We take the leftovers and use it in a tortilla the next day for lunch with sour cream and cheese.

After you've roasted a chicken or turkey (check out Chef Meg's home page for some great recipes), don't throw away the bones. They can be used to make homemade, low-sodium stocks, which can add flavor to your healthy, home-cooked meals.

Homemade chicken stock costs about $2.50 a gallon, but a small can at the store can cost about a dollar. You're really saving money with this recipe.

Store leftovers in the freezer--pour cooled one-cup servings into freezer bags or plastic containers, or freeze in ice tube trays for smaller portions.

Chicken Enchilada-Style for the Slow Cooker

I threw this together from what I had in my pantry at the time. With proper planning, I'd use fat-free soup and sour cream. It is delicious as-is, but fat could certainly stand to be cut.

You can put the chicken into the slow cooker while still frozen, so prep time is virtually non-existent! A great choice to throw in before bed for lunch at work or in the morning for that night's dinner.

This recipe calls for two pounds of chicken, also because it was what I had available (three large breasts), but would make a great meal with just one pound, too.

I served this along with brown rice and black beans. Tasty!

very yummy. i used only 2 chicken breasts when i made it, because i have such a small slow cooker and there was ALOT of sauce, so you can add more chicken with out changing the amount of other ingredients. the nutrient info is for 3 chicken breasts, 5 servings. i served this over whole wheat pasta ( not included in the calculations) there is plenty of this with just 2 chicken breasts. might also go well over rice or egg noodles. you can also use a whole 8 oz of fat free or 1/3 fat cream cheese, i did half and half (as is the nutrition info)

Light Mustard Honey Chicken - Baked

This dish is easy to prepare - mix all ingredients (and salt and/or pepper to taste) and marinate with chicken for 10 minutes up to 24 hours before (refrigerate if marinating more than 20 minutes). Chicken taco meat

quick and easy, even from frozen, this taco meat can be used for tacos, taco salads, chicken burritos, and much more.

This is a go-to meal starter for me, when I've forgotten to plan for dinner, I will serve this as one of those meals above. I use the chicken breast tenderloins, put them in the pan frozen, cover and turn the eye on really low to let them quick-thaw.

Use the amount of seasoning and water your taco seasoning calls for for one pound of meat, if you like your meat spicier add more seasoning (adjust the water accordingly) or add a second can of rotel or a can of diced green chilis.

Boneless Buffalo Chicken Salad Unchained Recipe Contest

I remade Chili's Boneless Buffalo Chicken Salad because I really like chicken salads and I like hot wings. This recipe cuts the original's calories by about half. Most of the savings comes in baking the chicken in panko instead of frying the chicken in a batter.

NOTE: After thinking about it and reading some comments, I changed the wing sauce amount in the nutrition calculator to be 1 serving (1 Tbsp.) instead of the 8 that I had originally to match the ingredients list (the amount of sauce used is not equal to the amount you consume). It's still higher in sodium than I'd like, but I think the recipe is a good first cut. I'll keep tinkering with it.

This recipe uses canned vegetables and is useful for somebody who doesn't have a lot of refrigerator space to keep fresh vegetables. However, for a fresher taste you can always use the fresh veggies! Crockpot chicken--takes minutes to make

Caribbean Pulled Chicken Stew

This is a thick hearty BOLD tasting stew. The ginger gives it a kick and the coconut milk adds a delicious texture and rich flavor. I was apprehensive at first as I wasn't too sure how this stew would turn out but it ended up being AMAZING, everybody loved it and had multiple servings, the pot was empty in no time !!! I promise this stew will not disappoint!

(use homemade chicken broth and you can cut the sodium in half in this recipe)

(for extra protein add a can of chick peas, but rinse well to keep the sodium low)
