Chickpea, Feta and Tomato Salad
Healthy and quick to make, this could be a main dish for lunch or a side dish. I like this with whole wheat crackers, like Ak-Mak. You could also put it in pita with seeded cucumber slices and lettuce. An herbed feta is especially nice in this.Submitted by: MARASCA

I usually make this with some low fat balsamic dressing. Sometimes I add or subtract vegetables, depending on what's available. If you would like to make it lower in fat, omit the cheese and the feta. Delicious on it's own.

Tomato, Feta, and Chickpea Salad
A super-easy, delicious summer side salad. Make sure you use fresh-squeezed lemon juice!
This salad would be perfect served with a crusty bread, and is great for parties or a quick dinner. You could even mix in a little more olive oil for sauteeing or roasting (350 deg C for 30-45 minutes before adding the feta, lemon juice, and half the fresh herbs).
