Fall Pot Roast with Turnips and Butternut Squash

I used a small venison roast, which has less fat and calories than beef, but most folks won't have a freezer stocked with deer meat. The crock pot makes this easy and it smells and tastes great! fall soup

just a soup I threw together the other day with some veggies we had and a pice of left over chcken for flavor. Cooking veggies in bigger chunks helps retain the nutrients also. You caould use pretty much ANY variation of this recipe. Add or take away what ever you have fresh. What a great way to clear out the last of the weeks veggies and make a healthy easy meal. Fall Veggie Chili

A great combination of chili and fall veggies makes a delicious healthy vegan meal.

I always rinse the canned beans to lower the sodium. I think the sodium count here on Spark does not take that into account. (Lately I use dried beans for all of my recipes to take care of that problem.) If you use dried beans make sure you soak them overnight and cook them before you make this recipe.

You can really use any fall firm fall veggie you would like. I sometimes use a combination of sweet and white potatoes. Rutabaga and turnips would be great too. As would red and green peppers.
