Creamy Farfalle with Wild Mushrooms

Insalata di Farfalle ala Putanesca
Main course, or side dish. Formal dinner, or picnic. Cook the pasta al dente, drain and shock w/cold running water until the pasta is cool. Don't overcook, or your salad will get gummy. Barf! Coarse chop the peppers, onions, anchovies (If you don't like...don't use. But, if you don't you're a puss.) Peel and split the garlic length-wise. Remove the snappers (green/brown center piece), smash and finely chop the garlic. Use more if you're so inclined, but not less. Roll the fresh basil leaves into a 'cigar' and slice very fine strips. Redrain the pasta well. Put into a large mixing bowl. Add dressing and toss 'til coated. Toss in the rest and fold them in.Submitted by: ROCKCONSUL
