Fiber One Chocolate Raisin Protein Bar

Fiber One Chocolate Raisin Protein Bar

This is a modified version of my original Fiber One protein bar recipe posted on my blog. This one cuts out the artificial sweeteners except what is already present in your protein powder of choice, and adds in a bit of coconut for flavor and texture. It tastes like a krispie treat smooshed on top of a chocolate Tootsie Roll infused with just a hint of coconut, raisin, and peanut butter, and it is dairy-free and artificial sweetener free except for the protein powder. You can try to find a Stevia-sweetened, non-dairy protein powder if you like. Also, note that one bar has over 7 grams of fiber, which is over 1/4 of your recommended daily intake.

At 226 calories, 29 g carbs (7 g fiber), 20 g protein, and 6 g fat, this is suitable as a portable meal replacement or post-workout snack for those of you doing Body-for-Life, South Beach, the Zone, or other similar plans.Submitted by: CAUSTICMUSE

Applesauce Fiber One Muffins - with cranberries and almonds

Moist, delicious, flavorful muffins that come together quickly and make a great breakfast. Swap out any other fruit sauce for applesauce; try canned pumpkin, mashed berries, canned butternut squash, mashed banana.

I accidentally made these without the butter and they were still edible, but nowhere near as delicious. Good to know that you can just leave it out and shave off 40 calories and 4g of fat per serving.Submitted by: EMI101908

Low Cal Pumpkin Fiber Muffins

Didn't have any type of flour on hand so I ended up using a mix of ground Fiber One and Hodgson Mill Oat Bran cereal. Honestly haven't tried these yet - they're cooling on the stove right now. Came out smaller than I expected, but looks like I can have about 3 for the "price of one" so I'm OK with that. They're super moist and almost a bread pudding like texture.. might not work for some people, but I love them!Submitted by: RUNDOGMPLS

Koshari (Rice, Lentils) - High Protein, Fiber & Potassium

Koshari (Rice, Lentils) - High Protein, Fiber & Potassium

Considered Egyptian "fast food", this is a fantastic recipe! Not like American fast food! It's different, for certain, but very filling and completely "clean" if you can get fresh tomato sauce!

This can be a vegetarian dish because traditional Koshari has NO CHICKEN in it. I added it in this recipe (and listed as optional) because I wanted added protein (and my husband refuses to eat a dish without meat!).

The "optional" ingredients truly are optional, however, they are included in the nutritional value.

The leftover lentils/macaroni/rice make for an amazing breakfast the next day with some egg whites! Submitted by: NICOLETTEDIMON
