Whole Grain Wheat Bread with Bran and Flax
This recipe is for 3 loaves of bread, 2 for the week and one to freeze. It is meant to be made with a stand mixer, but you don't need one. This has more good fat and fiber than most recipes.
This recipe is best for sandwiches, toast, french toast, dinner rolls, and sub rolls (adjust sizes).

Focaccia -Style Flax Bread (Via About.com Laura Dolson)
"I call this "focaccia" because it is baked in that style -- flat on a sheet pan, and then cut up into whatever sized pieces you want. It works for toast, sandwiches, and other bready uses. It is "rough" in texture like heavy whole grain breads. Since it isn't made with wheat, it doesn't have the same kind of grain as wheat breads, but the carb in flax is almost all fiber. Chocolate Flax Muffins
These are so moist and chocolatey I can't believe they are so healthy. They are a very filling and a great low carb treat.
I buy pre-ground flax meal, but you can grind your own.
