Conch fritters are a great delicacy in Florida and the Caribbean. This is an adaptation of one of our favorite appetizers using whole frozen cooked clams instead of conch easily obtained everywhere and baking them instead of deep frying them. After a day of feasting for my birthday, I wanted to aim for a vegetarian type dinner. My kids are fans of falafel so I figured this would be a nifty way to introduce them to more beans. Black-eyed pea fritters

This is one of those "Gosh, we're broke. What can we make out of what we've got that the kids will actually eat?" Voila! Serve with fancy sauce/Russian dressing, and it's a meal.
Mind you, each serving probably contains about 1 tbsp of oil, but you will need more like 4 cups total in order to deep fry. You can bake them instead if you want to, and eliminate the oil altogether. I imagine they'd be almost as tasty. They're really filling, either way.Submitted by: GLITTERFAIRY77

These are really fast and yummy. The jalapeno and red pepper make the fritters colorful and add just a little spice. If you don't have a red bell pepper laying around, just leave it out.
