Yes, I did just use the terms high protein, low carb, low fat, CHOCOLATE, and brownie in a recipe title... this isn't a lie folks, it's a tried and true concoction that is sure to knock your socks off! I bet you thought you'd never hear healthy and heavenly words combined in the same sentence, let alone, recipe! But here we have it... a brownie that is so good for you, and unbelievelably good to eat!

AND... it's a single serve recipe (so no temptations... even the best of foods should be eaten in moderation), takes but a minute to prepare, and an even shorter amount of time to make (plus it's microwavable!).

This is a very healthy and tasty way to serve oatmeal that has the ability to be customized with the added fruit, spices and sweetener to adjust it for different tastes and create a new flavor every day. It stays with me longer than any other breakfast I eat.

I developed this so I could have oatmeal a lot to help my cholesterol and still get fiber and lots of protein without a lot of calories and not out of bounds for healthy carb consumption.

It makes an oatmeal that is thick enough to add milk if you desire, but is a great consistency for eating alone. If you like thin oatmeal, add more water.Submitted by: BEACHSEASTAR

I got the original version of this recipe from HAVASUROSE. It is so much fun to cut the oranges into 8 wedges and blenderize them WITH THE PEEL STILL ON THEM! :-) Ultra high fiber, moist if you make them a day ahead and store in an airtight container, and very good for you.

To increase the protein to calorie ratio I halved the sugar and oil, took out the nuts, swapped carbalose flour for standard flour, egg whites for whole eggs, and added a cup of defatted peanut flour. And they still taste good!

You can order carbalose flour from netrition.com and defatted (12% fat) peanut flour from byrdmill.com

Mac & Cheese- high protein, low fat

Super quick, super cheap, healthy twist on the ol' kraft dinner. Instead of putting in butter with the cheese powder, add cottage cheese, peas, egg white and pepper. When you've added the extra ingredients, put it on low heat to simmer for 5 minutes or until it reaches the desired consistency. Season as desired- tabasco or salt improves the taste.
