Jamaican Jerk Tofu
This is the kind of miracle dish that can convert anyone to tofu. The Jamaican "jerk" seasoning is sure-to-please. It's sort of like barbeque and sort of like curry, savory and sweet at the same time. Just make sure you allow plenty of time for the pressing and marinating. The drier the tofu gets before you put it in the marinade, the better. It will soak up more flavor and be nicely chewy.

Jerk Chicken Taco's
My wife came up with this on the fly. This recipe does not count for toppings or tortillas. We served on corn tortilla's, with low fat cheddar cheese and avocado. You can also but a bit of sour cream on top if that's your thing. The jerk seasoning is 0 cal at 1/4 tsp, you use 2 tbsp so there is probably calorie considerations, but it is minimal. Jerk Chicken (Overnight Marinade)
Scotch bonnet and habanero chiles are native to the Caribbean and are extremely hot. Scotch bonnets are traditional, but you can use habaneros, which are similar and easier to find. Use fewer or more, according to your taste. Protect your hands by wearing gloves when cutting the peppers and when rubbing the chicken with marinade. Plan ahead so the chicken can marinate overnight; allowing it to come to room temperature before grilling makes for faster and more even cooking.
