Lamb and Couscous stuffed Onions

I remember watching the Frug make these on TV about 20 years ago and I have long since lost his exact recipe. This is my version of it and they are YUM-OH! The recipe makes 6-8 servings or more depending on how hungry you are. I haven't made it in forever, but I believe you will get at least 12 - 16 wrapped lamb packages out the recipe

Cuminiya - Libyan Lamb stew

A Libyan favorite. This is my MIL's(Allah rahumha-RIP) recipe, passed to me by my SIL. My big change was I cook lower fat. They would have fried the onions in 1/4c or more of oil. They have fed as many as 20 people off this recipe served on Italian bread.

Serve to be dipped out with bread approximately 1c per serving. Can also be served as sloppy sandwiches.

Shepherd's pie with lamb

This is an easy recipe for a basic homemade lamb shepherd's pie. I prefer to make it with lamb, but any ground meet can be substituted, though poultry is prone to dry out if cooked too long. If you have access to fresh herbs, adding some chopped fresh sage, thyme or marjoram makes this dish even better, especially on a cool day than calls for something warm and savory.

Green Bean and Lamb Stew

This is an updated (and healthier) version of a stew a Lebanese friend taught me how to make years ago.

This recipe is excellent for cold days when you want to eat something hearty and filling, but don't want to settle for a fatty stew. I usually serve this over some brown rice with a side of grilled or steamed veggies because I'm crazy about my veggies.

Feel free to omit the hot sauce and replace the lamb for beef.. in fact you can even choose not to use meat at all, in which case simply double the amount of chopped tomatoes you use and add a little less tomato juice. I implore you though, please DON'T skip the cinnamon. It really ties the dish together.

Leftover Lamb Curry

This is an adaptation of a leftover lamb curry recipe that I found on the internet some time ago.

Since it is a "leftover lamb" recipe, I'm not sure why the author thought that you'd still have the lamb roasting pan in use, but I left that instruction in as a parenthetical expression.

This is a recipe that can handle a fair amount of improvisation. (i.e. curry powder or paste, if you don't have garam masala; substitute dried fruit for apple; use another grain instead of rice, if you have more of one thing than another or have to deal with food allergies, sensitivities or dislikes.)

Greek-Style Lamb/Turkey Meatloaf

I found this delicious recipe in the newspaper. It originally called for ground lamb, but I substituted a portion for ground turkey. With the cinnamon and feta cheese, this recipe was wonderful...lots of leftovers for sandwiches or lunches. Recipe suggested serving with Tzatziki.

Lamb Shepperd's Pie

Adapted version

Mix the meat, 1 onion chopped, the carrot and the tomatoes.
Put them in a casserole (or a pot that goes in the oven with lid).
On top of that put a layer of potatoes, a layer of onion, a layer of potatoes.
On top of this put the sauce made by heating up together the milk and margarine (butter). I also added flour to make the sauce a bit harder.
Put the lid on the pot, put it in the oven , medium, and cook for about 1h with the lid on and 30 to 40 min without the lid.

I didn't add the spices but I used pepper and garlic powder.

Romanian Garlic Lamb Stew

My exboyfriend's mother made this delicious lamb stew; it's good with pilaf rice but can really go with just about anything.

I've just guessed at how many servings it makes - I can't remember how many it made last time we made it. It's even better reheated, though it should be reheated on the stove, not in the microwave.

Marinated Garlic, Red Wine and Rosemary Lamb Kebabs with Minted Lemon Yoghurt

This recipe's at its best when marinated overnight in the fridge, but if you're in a hurry you can cut it down to 20 minutes.

These are great to toss on the BBQ or grill for a party. We serve them with wholemeal pita breads cut into quarters, spread with a little garlic and low-fat margarine and barbequed lightly. Mmm... toasty!
