Spinach & Meat Lasagna
This could be made "lighter" with ground turkey and fat-free cheese(s). I used fresh herbs from my garden, but dried can replace the fresh herbs. These make hearty servings and are great served with a salad - very filling! Yes, the fat is "high", but it comes from the cheese and meat and for a dinner, this is NOT bad - and loads you up on PROTEIN!
I like to make ahead of time, stick in freezer or fridge and can be cooked later.

"No Boil" Italian Meat Lasagna
This is a super fast lasagna recipe to prep that doesn't require the lasagna noodles to be boiled before making the lasagna! The noodles get cooked with the use of a total of 50 ounces of pasta sauce. I will never go back to the old way ever again!

I have done some modifications to accomodate avoiding sulfites or preservatives
- Italian Sausage is actually a combination of beef and spices instead of using pre-made sausages
- Marinara sauce any kind can be used, because of preservatives avoidance I used the Safeway Organic version.

Veggie Lasagna (You won't miss the meat!)
This is a favorite in our household. My husband loves lasagna (he is a total meat-and-potatoes guy) but he loves this recipe. It's easy to make its mostly just the prep time of chopping. But the calories and the nutrients are worth the time! Since it is just us two; I either refrigerate or freeze left overs for later.
