To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

Cheese Latkes (ricotta pancakes)

Simple and easy, this recipe is high in protein and fits in with my diabetic/no refined white diet. The cholesterol can be cut by using an egg substitute. I use a fruit only jam for the topping. I make the whole recipe and use the leftovers for breakfast the next day.Submitted by: AMACHERIA

Great little snack, just the right taste of sugar and packed with a good bit of healthy soy protein.

You can easily mix up the root veggies that you include in this recipe. Swap in carrots, sweet potatoes, different colored beets, diced scallions, etc. Using garbanzo bean flour keeps this gluten-free, but if you don't have that on hand or gluten isn't an issue, whole wheat flour works nicely.
