| Reader's Digest Live Longer Cookbook's Muesli with Wheat Berries
High in protein, fiber, and some B vitamins, wheat berries are available in health food stores, or co-ops. If you prefer a softer texture, cook them in additional 10-15 minutes.
I don't always soak them over night, but cook 3 cups in my pressure cooker with 9 cups water and 1-1/2 T. olive oil. Bring to pressure and cook for 40 minutes. Quick release, and drain. I put 2/3 of this into containers, label, date, and freeze.
The other 1/3 is used for the rest of this recipe. I put the completed recipe into six 1/2 cup portions and use for my breakfast during the work week. (With a 1/2 cup of homemade yogurt.)
