Nancy's Tilapia (or Chicken or Veal) Piccata
This is my own creation. Sweet, mild, healthy, non-fishy tilapia is complimented by lemon, capers, butter, broth, and white wine in this satisfying and deceptively easy meal. I like my piccata lemony with touches of onion, garlic, and capers to round out the taste. This is a basic recipe for 1 lb. of filets. Please reduce this recipe accordingly if you use fewer filets, unless you want the leftunders as lunch or another dinner, like I do, if all is not eaten during the first go-‘round. I am a strong believer in flexibility, so experiment and substitute most any flaky white fish, pounded-flat veal or chicken cutlets, according to your creativity, pantry contents, budget, ingredient-availability, and personal tastes. Nancy's Ol' Fashioned, Easy, Simple Chicken Soup...Un-Chained Recipe Contest!
This is (a) an improvement on Corner Bakery Cafe's Mom's Chicken Noodle Soup; (b) a large pot of vitamin-rich, naturally sweet, nutritious, chicken soup that (c) is very easy to make, (d) freezes well, (e) feeds about a dozen hungry people, and (f) I make throughout the year after having and making many different variations on a theme for many years
Although it can take a little time to get the chicken off the bones, it's SO worth it! Also, if you don't want to use a whole chicken or shredding it just isn't your thing, you can use chicken parts or whole breasts instead, cut off the big chunks, and dice or shred them. They'll take less cooking time, too.

Nancy's Homemade Tomato Sauce
I made tomato sauce from scratch for the first time and it turned out so good, I went a little crazy. To skin and seed a bushel of plum tomatoes takes hours (for one person) and then the cooking time is another few hours. This is a long project, but well worth the time. I tried my hand at jarring the sauce and it worked very well, but it can be frozen in small batches too. The recipe can also be reduced for a smaller quantity of tomatoes - the amount of onion and garlic is "to taste" as are the spices.Submitted by: NEWME720

Nancy's Lentil Soup
In large soup pot, heat oil, over med heat. Add onions, carrrots and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano and basil. Cook for 2 minutes. stir in lentils, and add water and tomatoes. Bring tro a boil. Reduce heat and simmer for at least 1 hour. When ready tos erve, stir in spinach and cook until it wilts. Nancy's Chicken Dumpling Soup
Cut chicken into bite sized pieces. Add to pot with : chicken broth, 6 cups of water, chopped carrots [about 4], onion or onion powder, celery, parsley, garlic powder, pepper. Bring to boil and cook till chicken is done.
