I worked for months and months to perfect a whole wheat pizza dough, and I think I've finally found it. We love it, love it, love it! This makes enough dough for two large pizzas. We normally use one, freeze the other. To use the frozen one, thaw on the counter and then place in off oven on a pizza pan. Pour a recently boiled kettle of water in a roasting pan under the dough and close the oven. The warm, moist air reproofs the frozen dough.Submitted by: MIGHTYFINEWINE

A classic Neapolitan pizza dough recipe, meant for baking at extremely high temperatures (800+ degrees). It works in home ovens and on the grill, but really shines when the pizza is made in 90 seconds in a wood fired oven!

This recipe makes four thin crust pizza crusts each serving 4 people or if you prefer thicker crust just double the nutritional value and make two thick crusts instead.

Rolled into a ball and placed into a plastic freezer storage bags it freezes easily and can be kept in the fridge overnight. If frozen just lay out on your counter top in the morning and by the time you come home in the evening your dough is ready and waiting to be rolled out and topped.

The recipe yields two 10-11 inch pizzas.
Weir uses all-purpose flour in her receipe.
Since I had run out, I used King Arthur's White Whole Wheat Flour. I used .5 cup extra flour while kneading.
The dough rested for 2 hours and cooked evenly.
