Red Beans (for Red Beans and Rice)
This is a traditional red beans and rice recipe. The calories are modest, but the fat -- particularly the saturated fat -- make this a recipe best left for special occasions. Try substituting lower-fat meat for a more healthy version!Submitted by: RAINSMOM

Puerto Rican Red Beans & Brown Rice w/ Chorizo
One of my family's favorites. Not spicy. My 3yr old eats this up! To make it heartier add ham and green peppers. To make it spicy, add tobaso. I have made alterations to this recipe for what I have in my cubard, and it has been delicious every time with black eyed peas, pinto beans, and even keilbasa. Enjoy it your way!Submitted by: BACKYARDIGANMOM

Spicy Red Beans and Rice (with chicken)
Stick to your ribs dinner which is really easy and really good! Spice can be adjusted for your taste, and you can use hot, medium, or mild chili beans. This is also good with shrimp, or if you're a vegetarian, don't add the meat! Servings are about 1 to 1 1/2 cups, makes 6-8 servings. An awesome way to use leftover rice or chicken!Submitted by: SMSLAW
