Slow Cooker Creamy Italian Chicken

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

Kickin' Creamy Chicken Stew in a Slow Cooker using FROZEN chicken breasts

For this recipe I use frozen chicken tenders or chicken breasts in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want.
Note: I also have a low sodium version of this recipe that is similar, and tastes good, too!

I got this from the Fix It and Forget It Lightly cookbook. It calls for any diet soda. I actually used Diet Dr. Pepper. I used Kraft Original Barbecue Sauce. Slow Cooker Chicken Tortilla Soup

This is an adaptation of my favorite chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash.

My mother-in-law gave my husband this recipe to make me for me our first Valentine's Day together. We still make it pretty frequently. It's so simple and even my two preschoolers like it. I've increased the amount of carrots because otherwise my kids eat all the carrots. I usually serve it with some instant rice and a salad.

Carol's Slow Cooker BBQ Beef (crockpot, barbeque, slowcooker, crock pot)

The meat does not need to be seared in skillet first to make this fall-apart tender, pulled BBQ beef for sandwiches. This recipe has so much flavor no one will notice the Worcestshire sauce & the salt were deleted to reduce sodium (you may also use low-sodium catsup and BBQ to reduce sodium further). Using molasses instead of brown sugar and Worcestshire gives a depth of flavor and authenticity, while reducing sugar & sodium. It is great to take to picnics, buffets, or tailgating. Freezes well.

Slow Cooker Glazed Cornish Hen

Got the idea for this on another site. It originally called for 4 whole game hens but I changed this to accomodate a more reasonable portion size. Slow Cooker Fall Soup

This makes 8 2-cup servings and is really nutritious. There is a lot of waiting involved. The beans need to soaked, it cooks for 10 hours on low. But it's warm, healthy, and filling. The servings are huge and there is room for crusty bread or meat. Add whatever spices you prefer but keep in mind that the base of the soup is butternut squash. Enjoy!

Slow Cooker Macaroni and Cheese

Prep Time: 15 minutes
Cook Time: 6 hours,
Ingredients:
8 ounces macaroni
12-ounce can evaporated skim milk
1 1/2 cups skim milk
2 beaten eggs
1 teaspoon salt
1/2 teaspoon pepper
4 cups finely shredded low-fat sharp cheddar cheese
Preparation:
Pre-
cook macaroni for 5 minutes; drain.
Add to slow cooker with evaporated skim milk, skim milk, eggs, salt, pepper and 3 cups of the cheddar cheese.

Mix well; sprinkle another 1 cup of the shredded cheddar over the top.

Cover and cook on low heat for about 5-6 hours, or until it's starting to turn a little brown on top.
