This meal comes together pretty fast. It's a very hearty meal, that goes great with a salad.

Southwestern Chicken Soup

I made this soup after trying a similar one at a restaurant. Theirs had fewer tomatoes, no beans and white rice. I wanted to add more nutrition, so I added spinach, a green pepper and more tomatoes, and I use white meat chicken instead of dark. Beans and brown rice add fiber. This new soup is a good compromise of taste and time

Chef Meg lowered the fat and calories of traditional potato soup by using 1% milk and using bacon and cheese as garnishes instead of ingredients. Onion and celery add fiber, and low-sodium stock keeps salt levels in check. Slow Cooker Chicken Tortilla Soup

This is an adaptation of my favorite chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash.

Minestrone Soup

If you love Minestrone, you will love this recipe!! In my opinion this is better than Olive Garden's Minestrone soup. I love that you can make it as thick or thin as you want. Try adding some red wine for a more authentic flavor. I left the wine out in order to shave calories.

Carrot-Ginger Soup

This soup is so simple, with the main ingredient being only carrots, and no potatoes or cream to thicken it. I'm sure there are many directions in which the flavors could travel, but I prefer to make it with a predominantly Indian taste. Feel free to adjust the spicy-level as necessary. I like it with a moderate to intense heat, but you can add more or less cayenne and crushed red pepper to suit your own taste. The final product should be smooth and evenly blended, so you will need some kind of food processing device to get it right.

Pseudo-Sophisticated French Lentil Soup

I call this soup pseudo-sophisticated because of how gourmet it tastes, even though it is one of the easiest things to make! I got this recipe off of www.vegweb.com and I absolutely love it. I have made some modifications but its basically the same. This soup has AMAZING fiber and protein values.

Jalapeno & Potato Soup

I first thought this a strange combination when I saw this on the menu on an Alaskan Cruise. The head waiter told me to try it; that I wouldn't be dissapointed. True enough, it was amazing! The cruise ship didn't have the recipe in their cookbook, but I found a similar one easily enough online. This is now one of my family's favorites.

The "I need to eat more veggies" Soup

This soup is so versitile. I wind up tossing in whatever vegetables I need to use up and it always tastes good. Sometimes I add a bit of hot sauce for a kick.

A serving is about a cup, just perfect to pack for lunch with a half sandwich.
