Chicken 'Gumbo' (South Beach)
This seems time consuming, but once you make it once it becomes a very simple quick dish. This is based on a SB recipe, but I changed it for my taste.Submitted by: KARAPN

South Beach Chicken Mole
If not on the diet, might want to serve with rice. The original recipe calls for unsweetened peanut butter, I use Jif though.Submitted by: JOANNA12

Chicken Veg Soup with Mung Bean (South Beach style)
I like to make up dishes. I made this South Beach style by keeping in mind I wanted 2 cups of veggies including 1/4 c beans and 3 oz protein lean. You can sub any bean for the Mung bean sprouts (if you want) or if you don't want bean in your soup just replace 1/4 of some other low glycemic veggie. Also keep in mind that the garlic, ginger, soy and hot pepper is to taste or sub for another flavor depending on your mood.Submitted by: KARAPN

South Beach Chicken Cremini
This is a recipe I've tweaked a little from www.southbeachdiet.com. I use chicken thighs instead of breasts, regular mushrooms if I don't have cremini, and garlic. It's almost too delicious to be a Phase I recipe! Submitted by: EXENEC

Mediteranian Chicken with Tomato Salad (South Beach Phase 1)
This is the greatest chicken ever. It's got goat cheese, and asparagus, and caramelized onions-- all topped with a sweet summer tomato salad. I don't need to talk it up, just make it and you'll see what I mean. Serve it with a fresh herb salad to really blow some minds.Submitted by: OHSWEETCALAMITY

Chicken, spinach and cheese on Toast (South Beach Phase 2 &3 friendly)
I was tired of eggs for breakfast and pulled this together this morning. You could use the same ingredients and just ONE piece of bread, or reduce ingredients to go with one piece of bread. I couldn't find baby spinach in the calculator but it is best with baby spinach leaves. Gluten free bread can be used.Submitted by: MARTHAFROMMASS
