Thrifty Southbeach Egg Cups To Go

It is often difficult and expensive to find low fat swiss cheese. So in this recipe I just use regular cheese only less than in the Southbeach Recipe.
Egg yolks do have some important nutrients and add a rich flavor so I do have a couple of whole eggs in this recipe. Using this mixture instead of egg substitues reduces the cost.
This turns out like little spinach soufles!
