Feta Stuffed Chicken Breasts
Preheat oven to 425. Spray baing pan with non-stick spray.
With fork, mix together feta, sun dryed tomaotes (finely chopped), basil, salt, pepper in small bowl util blended.
Spread panko on sheet of waxed paper.
With small sharp knife, cutpocket approx 2.5 inches in each chicken breast. Put 1/5 of mixture in each breast.. Press edges closed.
Brush top of each breat with mayo. Press coated side of chicken one breast at a time into panko. Place coated side up inn prepared pan.
Lightly spray bread cumbs with non stick spray.
Bake until chicken is cooked through and crust isgolden about 25 minutesSubmitted by: MARTY19

Spinach Stuffed Chicken Breasts
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.
3. Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon, and secure with a toothpick. Place in shallow baking dish. Cover.
4. Bake in the preheated oven for 1 hour, or until chicken is no longer pink in the center and the juices run clear. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
