Thai curry with shrimp and sweet potatoes

Based on a couple of recipes as guides and what I had on hand. Tastes so much like the curry at our favorite local restaurant, and so easy!

This can easily be made vegetarian by omitting the shrimp and fish sauce, though the fish sauce does add distinct Thai flavor.Submitted by: GIRANIMAL

In a large skillet, heat oil on med high heat. Add scallion whites and veggies and red curry paste. Saute 2-3 min. Add shrimp and garlic, cook 2-3 min more. Then add coconut milk and fish sauce. Mix well, simmer for 2-3 min more until shrimp is cooked through. Remove from heat and add scallion greens and cilantro. Add in cooked lo mein noodles and toss till coated.
