Kitchen Sink vegetable soup (fat-free, vegan, low-sodium)
This is just basic vegetable soup. It's amenable to whatever veggies you happen to have around, and is great for using up leftover vegetables.
I did the nutrition calculation for 1 cup of soup; eat as much as you want. :-)

Vegan 13 Bean and Vegetable Soup (slow cooker)
My take on a healthy veggie bean soup made with Bob's Red Mill dried 13-Bean Soup mix. I've added nutritional yeast for protein and richer flavor. You can add any vegetables you like. Country Vegetable Soup (vegan) (1 point p/serve)
Packed with vitamins and flavour, I consider this soup very versatile. So long as you keep to basic principles (no oil, no white potatoes) you can switch the veggies around to suit whatever is in your fridge!
Calculate 1 cup thick soup as 1 serve.
Once cooked, I use this soup in many ways:
* tossed through pasta with a little parmesan cheese
* reheated with 2 tbsp peanut butter and 1 tbsp curry powder, then on top of rice/pasta
* alone as a simmering sauce for chicken
* simmered with red wine and beef/lamb
* mix 1 cup soup with 1/2 cup milk for a creamer version

Improved Vegan Tomato Vegetable Soup
Greatly improved soup recipe from the one I had up before--the base used to be campbell's tomato soup, but tasted a bit too ketchup-y on reheat (then again, all that HFCS that's used as filler, I shouldn't have been surprised).
