This recipe is for 3 loaves of bread, 2 for the week and one to freeze. It is meant to be made with a stand mixer, but you don't need one. This has more good fat and fiber than most recipes.

This recipe is best for sandwiches, toast, french toast, dinner rolls, and sub rolls (adjust sizes).

This bread is dense, filling and good for you! You can add some wheat gluten to make it rise a little more and make it a little less dense.

Whole Grain Blueberry Oatmeal Muffin

This is a whole grain, low calorie version of the Fannie Farmer cookbook muffin. Oatmeal, whole grain four, and Splenda is used instead of pastry flour and sugar. You could further cut it using egg substitute and oil instead of butter. I raised my kids on this muffin recipe - and have since made it a bit more healthy.

Aztec Whole-grain Omlette

I was trying to use up a bunch of little 'scraps' of leftovers from making soup, and decided to splurge on my Sunday brunch and create a heart healthy, whole grain, tummy satisfying omelet. The omega-3 eggs each have 400 mg of omega-3s, and I get mine at Walmart. The quinoa, if you're not familar with it, is an amazing whole grain from the Aztec's. It's the only grain to be a complete protein and it has a wonderfully, slightly nutty flavor which lends itself well to this dish. I get mine bulk at a local co-op for less than half the price, per pound of what you pay in the specialty section of the grocery store for a 6 oz. box. Store in an airtight container in your fridge, because like all whole grains, it has a germ which is prone to going rancid if left out for longer than a few weeks in a warm place.

I served it with a cup of tropical fruit salad to soothe the heat from the salsa and a steaming cup of cafe con leche...wonderful and very filling. Felt like I was eating out at a fancy hotel brunch, in the comfort of my own home. I hope you enjoy, too. :)

Using whole oat and spelt flours in place of wheat flour, this rich muffin makes a great hearty breakfast muffin or afternoon snack! I used clover honey in this batch. Make 2 dozen, can be mixed and kept in an airtight container in the refrigerator for up to 2 weeks. I bake 6 at a time so we can have fresh muffins for a few days. I add whatever fruit is in season, like blueberries, raspberries or strawberries in the summer, and bananas or raisins in the winter.

Hearty Whole Grain Waffles

I start with Lehi Roller Mill Whole Grain Heart Healthy Hotcake mix as a base for this recipe. You can use any pancake mix you like. I use Lehi because it is a very wholesome food containing whole wheat flour, whole flaxseed meal, nonfat dry milk, eggwhites, and dry buttermilk. I add old fashioned oats and cold milled flaxseed in this recipe, so even if you use a basic pancake mix, you will end up with a nice whole grain waffle.

Whole Grain Banana Nut Bread

This is the BEST banana bread on the planet. My husband is diabetic and adores this low sugar banana bread (in moderation of course). I also use vegan malt sweetened chips because of his diabetes- Lower carb content than regular chips listed here. I also use a light brown sugar. I don't know if it makes a difference in the sugar/carb content it just doesn't make the bread overly sweet. Also, you can leave in/add to nuts or choc chips as your tastes dictate. You don't even know it's whole grain. I use organic whole wheat flour not the white wheat listed in the recipe. The bread doesn't rise quite as high but is still SUPER yummy.

These are excellent and gorgeous when served with caramelized apples, whipped topping and a sprinkling of coarse sugar. Try experimenting with syrup selections as well. This whole-foods breakfast keeps you full all morning! It takes a little preparation but it is worth it. You can find the whole grains pretty cheap in the bulk foods section at a health food store. They'll have the unsweetened dried fruits too, but probably in a refrigerated section. The concentrated fruit sugars in the dried fruit add enough sweetness that you won't need to add any extra sugars.

Blueberry Whole Grain Pancakes

Dried blueberries make these pancakes extra sweet. I use 3 tbsp of sugar but I like mine extra sweet, but feel free to reduce the sugar. Between the millet and the blueberries, the dough is pretty sweet already.

altered a receipe for carrot cake, substituted whole grains for plain flour and the pumpkin replaces the eggs and oil. I have useda boxed carot cake mix and just added the pumpkin, and it was tastey but who wants imitation carrots?
