Cajun Roasted Squash and Yams
Adapted from a recipe I found online for roasted butternut squash (#200194 on allrecipes.com if you want the original). The cajun spice was an emergency substitute for garlic salt (which I don't keep since we usually use fresh garlic) and it turned out great. The addition of ground cloves was a last minute inspiration. I couldn't find this in the ingredient list, but you need to spray the foil-lined tray and then the top of the yams with a small amount of olive oil spray (Pam, etc.). Also, please note, I used 1 cup cubed yams because that was what they had, so be conscious of this when looking at the nutritional info.
