Think I might try it. Quick meal
I love this dish! I sear my pork loin on all sides in a cast iron Dutch oven, pour broth over it, put the lid on and put it in the oven at 225 F for 8 hours or so. I pull it apart, add the remaining ingredients (I use baby spinach) and put it back in the oven for another 30 minutes. So good!
This response is for Socalsally42.... Plug your slow cooker into an automatic timer. Turn on the slow cooker and set the automatic timer to the time you want it to start and it will be ready when you get home.
@SOCALSALLY42, there are many slow cookers with timer options, so if the recipe calls for 6 hours of cooking, the slow cooker switches over to "warm" at that point.
looks good, but I'm frustrated because people said that if I work I should get a slow cooker, however I am gone from 7am to 6pm! I have yet to find recipes where the cooking time is that long. What am I supposed to do since I'm clueless when it comes to cooking:)

Murgh! How much endive? How much pepitas? How long does it cook after adding them -- or do they get added right away?
Looks delicious...but I enjoy more spices...onion and carrots would be nice. Endive and Escarole, I believe are both in the daisy family, but one has curly leaf and the other a more broad flat leaf. Both can be bitter. Good recipe!
Boston Butt? Never heard it called that! lol Glad you can freeze it. If it serves 8 I'll be eating it every day for 8 days. Glad I now have a use for my slow cooker.

My mother made an Endive dish for the holidays of Endive, chopped onions, boiled eggs, brown sugar and vinegar. She would cook everything but the eggs in a pot then add the chopped boiled eggs. Wow, is it ever good!

The recipe says 8 - One cup servings at 283 calories. In the video Chef Meg says serving size is 1.5 cups at 274 calories. Which one is accurate? BTW - it was awesome! First time eating escarole.
Escarole is a TYPE of broad leaf endive. There are also narrow leaf endives like chicory and frisée.
Escarole and endive are two different things. That tip isn't correct.

I've never seen Escarole called Endive. Isn't an Endive a different vegetable altogether?
